%3C/p%3E%3Cp%3EI%20had%20a%20counter%20full%20of%20fabulous%20fruits%20and%20veggies%20that%20a%20wonderful,%20generous%20friend%20brought%20from%20a%20Farmer's%20Market%20in%20a%20neighboring%20town.%20I%20decided%20on%20a%20lovely%20tart%20filled%20with%20ricotta%20and%20honey%20and%20topped%20with%20grilled%20peaches%20and%20strawberries%3C/p%3E%3Cp%3EI%20made%20the%20tart%20crust%20and%20grilled%20the%20peaches%20early%20this%20morning.%20I%20also%20roasted%20some%20baby%20golden%20beets%20(oh%20my%20gosh,%20they%20were%20good!!)%20and%20the%20oven%20went%20off%20for%20the%20rest%20of%20the%20day!%3C/p%3E%3Cp%3EFor%20dinner%20we%20had%20a%20standoff-%20a%20couple%20of%20the%20kids%20had%20friends%20over%20and%20wanted%20pizza-%20the%20adults%20wanted%20....well,%20they%20didn't%20really%20know%20what%20they%20wanted%20but%20it%20wasn't%20pizza!%20There%20were%20some%20lovely%20peas%20and%20shallots%20in%20the%20bag%20from%20my%20neighbor%20and%20I%20had%20tomatoes%20and%20pancetta%20around.%20I%20had%20some%20pork%20chops%20that%20I'd%20salted%20and%20had%20air%20drying%20from%20last%20night%20in%20the%20fridge%20so%20they%20went%20on%20the%20grill%20too%3C/p%3E%3Cp%3EThe%20pasta%20disappeared%20-%20and%20I%20hope%20you%20enjoy%20as%20much%20as%20my%20family%20did%20:)%3C/p%3E%3Cp%3E**NOTE-%20I%20used%20some%20fresh%20fettucine%20I%20made%20yesterday.%20Any%20wide%20noodle%20or%20short%20curved%20pasta%20would%20do%20well%20to%20capture%20the%20sauce.%20Also,%20I%20added%20a%20couple%20of%20handfuls%20of%20quartered,%20small%20Campari%20tomatoes%20when%20I%20tossed%20the%20pasta%20with%20the%20sauce%20and%20butter%3C/p%3E%3Cp%3EBalsamic%20reduction%20or%20glaze-%20optional%3C/p%3E%3Cp%3EPut%20flour,%20sugar,%20salt,%20and%20cold,%20diced%20butter%20in%20food%20processor%20and%20pulse%20till%20the%20consistency%20of%20coarse%20cornmeal.%20Mix%20egg%20yolks,%20vanilla%20and%20lemon%20juice%20together%20and,%20with%20motor%20running,%20slowly%20add%20to%20flour%20mixture%20till%20dough%20forms%20a%20ball-%20don't%20over%20process.%20Form%20a%20flat%20disk,%20wrap%20well%20in%20plastic,%20and%20refrigerate%20for%20an%20hour.%20Preheat%20oven%20to%20350%20degrees.%20Roll%20out%20dough%20and%20fit%20into%20an%208%20inch%20tart%20pan%20with%20removeable%20bottom%20(or%20a%20few%20individual%20tart%20pans)%20Bake%20for%2020-30%20minutes%20(depends%20on%20your%20oven)%20till%20just%20lightly%20golden.%20Cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EMix%20ricotta,%20honey,%20and%20vanilla%20bean%20seeds%20till%20blended%20well.%20Refrigerate%20till%20ready%20to%20fill%20tart.%3C/p%3E%3Cp%3ECut%20peaches%20in%20wedges%20and%20rub%20lightly%20with%20oil.%20Grill,%20cut%20sides%20down%20for%202-3%20minutes%20till%20light%20golden%20grill%20marks%20are%20formed.%20Flip%20using%20tongs%20and%20repeat.%20If%20peaches%20aren't%20softened%20to%20your%20liking,%20put%20them%20in%20the%20oven%20on%20a%20rack%20in%20s%20pan%20for%207-10%20minutes.%20Allow%20to%20cool%3C/p%3E%3Cp%3EQuarter%20strawberries%20and%20sprinkle%20with%201/4%20cup%20sugar.%20Allow%20to%20macerate%20on%20the%20counter%20at%20least%2015%20minutes%3C/p%3E%3Cp%3EAssembly:%20Remove%20tart%20from%20pan%20to%20a%20serving%20plate.%20Spread%20ricotta%20mixture%20in%20tart%20till%20about%201/2%20to%202/3%20full.%20Top%20with%20grilled%20peaches%20in%20a%20spoke%20pattern%20and%20a%20strawberry%20or%202.%20Chop%20remaining%20peaches%20and%20mix%20with%20macerated%20strawberries.%20Sprinkle%20tart%20with%20sugar%20and%20serve%20with%20strawberry/%20peach%20mix.%20I%20like%20mine%20drizzled%20with%20a%20drop%20or%20two%20of%20balsamic%20glaze%3C/p%3E%3Cp%3EMichael,%20thank%20you%20for%20hosting-%20hope%20the%20ducks%20AND%20your%20boys%20are%20doing%20well!%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
