Dried Beef and Cream Cheese Log
Dried Beef & Cream Cheese Log~ Great with pretzels, buttery crackers and celery sticks.
- 1 container (8 oz) reduce-fat, soft-style cream cheese,
- room temperature
- 1/4 cup reduced-fat mayonnaise
- 1 t drained prepared horseradish
- 1/2 cup shredded Swiss cheese
- 2 oz dried beef, finely chopped
- 1 T drained chopped pimientos
- 1/2 cup finely chopped green onion tops
- Serve with:
- Pretzels, Buttery Crackers, Celery Sticks, Melba Toast Slices
- In a small bowl, with an electric mixer on high
- Beat cream cheese, mayonnaise, and horseradish until creamy
- Stir in Swiss cheese, dried beef, and pimientos
- Shape the mixture into two-4 inch long logs
- Wrap logs in plastic wrap and refrigerate for at least 2 hours
- Mixture will keep in the refrigerator, wrapped for 2 days
- Spread the green onion tops on waxed paper
- Unwrap the logs and carefully roll in the green onion tops
- Coating completely
- Rewrap logs in plastic wrap and refrigerate
