Receta Four Grain Pancakes
Grains are so good for you and I love these pancakes. They are easy to make and taste wonderful. Add some maple syrup, sorghum or honey along with your favorite fruit for a great breakfast.
- 1/2 cup whole wheat flour
- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1/2 cup quick-cooking oats (could use rolled oats, too)
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3 tablespoons butter or margarine, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/4 cups buttermilk (could use regular milk)
- 1/2 cup nuts or your choice (Optional)
Whisk together the whole wheat flour, cornmeal, all-purpose flour, oats, salt, baking powder and baking soda in a mixing bowl. Stir in melted butter, vanilla extract, eggs and buttermilk. Fold in nuts. Spray a griddle or skillet with cooking spray and cook pancakes until brown on both sides and done in the middle. Makes 8 to 10 medium sized pancakes. Enjoy!
