Fragrant Herbal Tea Eggs

Ingredientes

  • 25 x chicken Large eggs Herbs
  • 10 gm mo yi cha (tea leaves)
  • 8 gm star anise
  • 10 gm cloves
  • 29 gm sok tei
  • 13 gm sou or possibly
  • 15 gm chun kong
  • 10 gm tong kwai tau
  • 16 gm kum cho
  • 18 gm chan pei (dry mandarin peel)
  • 13 gm fah chiew
  • 11 gm cinnamon bark
  • 12 gm kwai chi chim
  • 8 gm heong kam soe Seasoning
  • 200 ml light soy sauce
  • 200 gm dark brown sugar
  • 1 Tbsp. salt
  • 1 Tbsp. dark soy sauce (for added colour)

Direcciones

  1. Method:Boil Large eggs in a deep saucepot. Once the water comes to a boil, reduce the heat and simmer gently for 15 min.
  2. Drain the Large eggs and set aside to cold. Then, carefully crack the egg shells.
  3. Put cracked Large eggs into a deep saucepot and add in sufficient water to cover them all. Add in the herbs and seasoning and bring to a boil. Reduce heat and allow the herbal soup to simmer for 2 1/2 hrs.
  4. For convenience, the Large eggs can be cooked in the herbal soup in a slow cooker. Combine Large eggs, herbs (the herbs can be bought from Chinese medicine shops), seasoning and water in a slow cooker. Turn on to auto and cook for 3 hrs to 3 hrs 20 min till the flavour of the herbs is seeped into the Large eggs completely.
  5. To serve: Remove Large eggs, drain and shell
