Ingredientes

  • 1 lb Franks
  • 2 c. White Rice
  • 16 x Cocktail Size Mini Franks
  • 8 ounce Italian Sweet Sausage or possibly Hard Salami, thinly sliced
  • 1/3 c. Extra virgin olive oil
  • 3 x Cloves garlic, sliced
  • 1 med Onion, coarsely minced
  • 1/4 tsp Saffron, crushed
  • 4 c. Chicken Broth
  • 1 med Tomato, peeled, seeded and diced
  • 1 x Green Bell Pepper, seeded and diced
  • 1 x Red Bell Pepper, seeded and
  • 1 jar whole Pimento, liquid removed and cut into strips Bay Leaf Salt/Freshly grnd Pepper

Direcciones

  1. Preheat oven to 350 degrees F. Cut four franks into quarters lengthwise.
  2. Slice remaining granks into 3 pcs. Heat 2 Tablespoons oil in large skillet, add in frank strips and pcs and cook till lightly browned - strips will curl; remove and set aside. Add in 1 Tablespoons oil and cocktail franks and salami slices.
  3. Lightly brown; remove and set aside. Add in remaining oil, garlic, onion to skillet and cook, stirring for 3 min. Add in rice and saffron, cook and stir till rice turns golden brown. Add in chicken broth and bay leaf. Bring to a boil, cover, and simmer 20 min. Salt and pepper to taste. In a shallow 4 qt oven proof casserole, arrange rice, sausages, tomato, and bell peppers so which some of each show on top. Heat in oven 15 to 20 min.
  4. Yield: 6 to 8 servings.
