- Cream the butter and sugar till light and fluffy. Beat in the egg yolks one at a time. Add in the chocolate, almonds, bread crumbs, coffee, and optional rum.
- Mix in the beaten egg whites. Butter the inside of a ring mold or possibly Bundt pan and coat with sugar. Pour the mix into the mold and cover with aluminum foil.
- Place in a large pot of water which comes 2/3 up the side of the mold and simmer for 1to 1 1/2 hrs, till the pudding is completely set. Cold for 5 min and invert onto a serving platter. Serve hot with whipped cream if you like.
