Homemade Buttermilk Pancakes

**To freeze, place each pancake on a cookie sheet sprayed with non-stick spray to prevent sticking. Place the cookie sheet in the freezer for 2 hours or until each pancake is frozen. Place the pancakes in a freezer safe ziplock bag and store in the freezer for 2 months. To reheat, place pancakes on a cookie sheet in a preheated 300 degree oven for 10 minutes, or until heated through.**

Muffins

**To freeze any of the below muffins, place them in a gallon sized ziplock bag (with or without the liners) and place in freezer for up to two months. Place in microwave on high for 10-15 seconds to reheat or just leave them out on the counter to defrost. For muffins that require a topping, freeze without the toppings. Proceed with making the toppings after muffins are reheated.**

**Make two casseroles; Freeze one and eat the other. To freeze, assemble casserole in an aluminum casserole pan or a pan that can withstand going from freezer to the oven. Do not bake. Cover casserole dish in aluminum foil and label with date. Place in freezer for up to 2 months. To bake after freezing, place frozen casserole in a preheated 375 degree oven for 20-25 minutes or until nice and bubbly.**

**You can make this on the stove if you don’t have access to a slow cooker. To freeze, make sauce as normal and place in a pyrex dish or other freezer friendly container. Allow to cool for 2 hours with the lid off, then label, and freeze. Freeze only the sauce and not the noodles. Can be frozen up to 2 months. To reheat, place container in microwave on defrost setting when ready to eat. You can use this sauce for other beef and pasta dishes, lasagna, pizza topping as the sauce part, or a dip for breadsticks.**

**To freeze, make enchiladas as directed, omitting the sauce and the shredded as a topping. Wrap each enchilada individually in aluminum foil or place all of them in a gallon ziplock bag. Label and freeze for up to two months. To defrost, take enchiladas and place them on a baking tray/pan. Top with enchilada sauce and shredded cheese. Bake at 375 degrees for 20-25 minutes or until enchiladas are bubbly.**

**To freeze, make soup as directed. Keep noodles separate from the soup itself. Take the soup and place in a pyrex container or other freezer friendly dish. Allow to cool for an hour or two. Label and place in the freezer. Can be frozen for 2 months. To defrost, place container in microwave under defrost setting.**

**To freeze, make chili as directed. Take the chili and place in a pyrex container or other freezer friendly dish. Allow to cool for an hour or two. Label and place in freezer. Can be frozen for 2 months. To defrost, place container in microwave under the defrost setting.**

**To freeze, cook chicken as directed. Shred after cooking. Place shredded chicken in a ziplock bag and let cool for an hour. Label and place bag in freezer. Freeze for 2 months. Use in recipes that call for shredded chicken or use it as a topping for salads. Pair with a serving of cooked rice with a nice white sauce.**

Label and place in the freezer. Can be frozen for 2 months. To defrost, place container in microwave under defrost setting.**

**To freeze, make as directed. Take shredded pork and place in a pyrex container or other freezer friendly dish. Allow to cool for an hour or two. Label and place in freezer. Can be frozen for 2 months. To defrost, place container in microwave under the defrost setting. Use for a topping for baked potatoes with shredded cheddar cheese, top french fries with it along with some melted cheese, wrap in a tortilla with shredded cheese and enchilada sauce, over cornbread with toppings of choice, place shredded pork inside omlets or use as a filler for breakfast burritos.**

**To freeze, make crust as directed. Do not place any toppings on and wrap crust tightly in aluminum foil. Label and freeze up to one month. To defrost, place crust on the counter to defrost. Top with favorite pizza toppings and bake as directed.**

These recipes have been tested in my own home and have been deemed as freezer friendly.

Even if the government decides not to shut down, they will still make wonderful additions to anyone’s menu.
