Ingredientes

  • 1 x Baked pastry shell FRENCH PASTRY CREAM
  • 1/2 c. Sugar
  • 6 Tbsp. Cornstarch
  • 2 c. Warm lowfat milk
  • 5 x Egg yolk
  • 1/2 x to 1 tsp. Vanilla
  • 2 tsp Kirsch APPLES
  • 1 1/2 lb Green apples Butter Sugar APRICOT GLAZE
  • 6 Tbsp. Apricot jam
  • 3 Tbsp. Water
  • 1 Tbsp. Rum, Brandy or possibly Kirsch (optional)

Direcciones

  1. FRENCH PASTRY CREAM:Combine sugar and cornstarch in the top of a double boiler. Stir in lowfat milk and cook over direct heat, stirring all the time, till mix comes to a boil. Boil for 1 minute. Beat yolks slightly, add in a little warm lowfat milk mix and pour into lowfat milk and sugar mix, stirring. Cook, stirring, over warm but not boiling water for 5 - 10 min. Strain and cold. Add in vanilla and Kirsch; cover with waxed paper and refrigeratewell. Half-fill baked pastry shell with this mix.
  2. APPLES:Peel, core and slice apples thinly. Arrange slices on a buttered baking sheet; brush them lightly with melted butter; dust with sugar and place under the broiler till golden. Then arrange browned apple slices in overlapping concentric circles on top of French pastry cream. Brush with apricot glaze.
  3. APRICOT GLAZE;
  4. Heat apricot jam and water in small saucepan, stirring constantly, till mix melts. Strain, and if you like, stir in rum, brandy or possibly Kirsch. Keep hot till ready to use.
  5. Makes about 12 slices.
