French Bean And Potato Bhaji

Ingredientes

  • 4-5 T veg. oil
  • 1/2 teaspoon black mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1 lg. onion, finely sliced
  • 3-4 dry red chilies, coarsely minced
  • 10-12 fenugreek seeds
  • 15 g/1/2 ounce coriander leaves, finely minced
  • 1/2 teaspoon grnd turmeric
  • 1 lg. potato, peeled and cut into matchstick strips
  • 275 g/10 ounce French beans, sliced
  • 1 teaspoon salt or possibly to taste
  • 1 teaspoon grnd cumin

Direcciones

  1. Heat the oil over medium heat and add in the mustard seeds. As soon as the seeds pop, add in the cumin seeds, then the onions, red chilies and fenugreek. Fry the ingredients for 3-4 min, stirring frequently.Add in the coriander leaves and turmeric; stir and fry for 1 minute. Add in the potatoes, beans and salt. Stir till the ingredients are mixed thoroughly. Cover the pan and cook on lowest setting till the vegetables are tender (about 25 min), stirring occasionally.
  2. Add in the grnd cumin; stir and cook for 2-3 min and remove from the heat.
