Receta French Onion Rice
Maybe there are two ways to classify people in the world: those who like flavored rice and those who don’t.

I’ve made various rice pilafs in the past and my husband was always underwhelmed. I’ve always enjoyed flavored rice but my husband’s reactions to the dishes made me think something was off with my taste buds.
So, the opinion of this french onion rice in our household was split 50/50. We both finished our portions, one of us with more gusto than the other. I liked the complement to the peach chicken while the Omnivore would have preferred more contrast found in plain white rice.
If you’re my kind of people, make this recipe. If you’re in the Omnivore’s crowd, just walk away.
French Onion Rice (adapted from Curry and Comfort)
Ingredients
- 1 large white onion, sliced
- 1 cup raw rice (I used brown, either would work)
- 2 cups of broth (chicken, vegetable or beef)
- 1 Tbs of butter
- 1/2 tsp of dried thyme
- 1 cloves of grated or minced garlic
- black pepper to taste
- 1 Tbs of dried parsley
- 2 tablespoons soy sauce
- 2 teaspoons Worcestershire sauce
- 1 tsp red wine vinegar
- 1 bay leaf
Instructions
Heat a large pan over medium heat stovetop. Saute the onions on medium low heat with the butte and a sprinkle of salt. Stir occasionally, cooking for 20 minutes or until onions are deep, dark brown.
Add garlic, dried thyme, parsley and black pepper. Add rice and saute with all the other ingredients in the pan for about 2 minutes.
Transfer onion/rice mixture to a rice pot and add liquids and bay leaf.
Bring pot to a low boil, reduce to low, cover and cook 20 minutes. Let stand, covered, for 10 minutes before fluffing and serving.
