%3C/p%3E%3Cp%3EJulia%20introduced%20me%20to%20such%20exotic%20dishes%20as%20boeuf%20bourginon%20and%20poulet%20saute%20a%20l'estragon%20.%20.%20.%20I%20thought%20she%20was%20ever%20so%20sophisticated,%20and%20I%20devoured%20all%20of%20her%20ideas%20and%20recipes.%3C/p%3E%3Cp%3ETo%20this%20day,%20I%20never%20ever%20cook%20French%20Onion%20Soup%20without%20thinking%20of%20Julia.%20I%20remember%20thinking%20this%20simple%20soup%20was%20a%20little%20taste%20of%20heaven%20the%20first%20time%20she%20made%20it%20for%20us%20at%20a%20little%20soiree%20she%20threw.%20I%20remember%20watching%20her%20make%20it%20very%20carefully.%20She%20used%20tinned%20beef%20consomme,%20Campbells%20if%20I%20remember%20correct%20and%20then%20she%20used%20mozzarella%20and%20parmesan%20cheeses%20.%20.%20.%20the%20Parmesan%20pre-grated%20and%20from%20a%20green%20cardboard%20cylinder%20and%20the%20mozzarella%20also%20from%20a%20hard%20block%20and%20grated.%20I%20can%20remember%20there%20being%20so%20much%20mozzarella%20cheese%20that%20we%20almost%20choked%20on%20it.%20I%20think%20the%20idea%20was%20to%20have%20so%20much%20Mozzarella%20that%20it%20really%20strung%20out%20when%20you%20dipped%20it%20out%20of%20your%20bowl.%3C/p%3E%3Cp%3EI%20have%20come%20a%20very%20long%20way%20since%20then%20.%20.%20.%20and%20I%20would%20never%20use%20tinned%20beef%20consomme%20.%20.%20.%20I'd%20also%20never%20use%20cheese%20from%20a%20green%20cardboard%20cylinder%20or%20mozzarella%20.%20.%20.%20my%20cheese%20of%20choice%20being%20freshly%20grated%20Parmesan%20and%20sweet%20and%20nutty%20freshly%20grated%20Gruyere%20.%20.%20.%3C/p%3E%3Cp%3EI%20expect%20that%20Julia%20would%20never%20use%20them%20anymore%20either%20.%20.%20.%20I%20often%20wonder%20what%20happened%20to%20her.%20I%20imagine%20that%20she%20is%20the%20lady%20in%20residence%20of%20a%20beautiful%20country%20home%20or%20the%20wife%20of%20a%20Canadian%20Diplomat%20.%20.%20.%20or%20maybe%20she%20is%20just%20like%20me%20.%20.%20.%20a%20card%20carrying%20foodie,%20that%20just%20can't%20get%20enough%20.%20.%20.%3C/p%3E%3Cp%3Eof%20what%20else%20.%20.%20.%20but%20.%20.%20.%20food,%20recipes,%20and%20.%20.%20.%20French%20Onion%20Soup.%3C/p%3E%3Cp%3E*French%20Onion%20Soup*%3C/p%3E%3Cp%3EServes%204%20to%206%3C/p%3E%3Cp%3E(Depending%20on%20how%20greedy%20you%20are)%3C/p%3E%3Cp%3ESitting%20down%20to%20a%20hot%20bowl%20of%20this%20delicious%20soup,%20one%20might%20imagine%20that%20they%20are%20sitting%20in%20a%20little%20Bistro%20in%20the%20middle%20of%20Paris,%20instead%20of%20in%20a%20windswept%20and%20wet%20cottage%20in%20the%20middle%20of%20Kent.%20Ahh%20.%20.%20.%20perchance%20to%20dream%20.%20.%20.%3C/p%3E%3Cp%3EPlace%20the%20butter%20and%20olive%20oil%20in%20a%20large%20saucepan.%20Heat%20over%20medim%20heat,%20until%20the%20butter%20is%20melted%20and%20beginning%20to%20foam.%20Add%20the%20onions,%20reduce%20the%20heat%20and%20cook%20over%20low%20for%2015%20to%2020%20minutes.%20Add%20the%20garlic,%20and%20cook%20for%20several%20minutes%20until%20very%20fragrant.%20Stir%20in%20the%20flour%20and%20cook%20for%20another%20minute.%20Add%20the%20stock,%20wine,%20bay%20leaf%20and%20thyme.%20Season%20to%20taste%20with%20salt%20and%20black%20pepper.%20Bring%20to%20the%20boil,%20then%20immediately%20reduce%20the%20heat%20and%20simmer%20on%20low,%20very%20gently%20for%2020%20to%2025%20minutes.%20Taste%20and%20adjust%20the%20seasoning.%20Turn%20out%20the%20heat%20and%20allow%20it%20to%20stand%20for%20about%20half%20an%20hour%20to%20an%20hour.%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20serve,%20gently%20re-heat%20the%20soup%20until%20it%20is%20hot.%20Pre-heat%20the%20grill%20to%20high.%20Place%20the%20baguette%20slices%20on%20a%20baking%20tray%20and%20brown%20under%20the%20grill%20until%20lightly%20toasted%20on%20both%20sides.%20Ladle%20the%20soup%20into%20oven%20proof%20bowls%20and%20place%20the%20bowls%20on%20a%20baking%20tray.%20Top%20each%20bowl%20of%20soup%20with%20a%20few%20baguette%20rounds%20and%20sprinkle%20evenly%20with%20first%20the%20Gruyere%20cheese%20and%20then%20the%20Parmesan.%20Place%20under%20the%20grill%20and%20cook%20until%20browned%20and%20bubbling.%20Serve%20immediately.%3C/p%3E){kind=link}
