Finally, I made this soup! Nobody in my family likes french onion so I waited, and waited until I was home alone one night and didn’t have anyone else to please but myself. I made the whole pot for myself and heated it up 3 or 4 times over the weekend…
French Onion Soup
INGREDIENTS:
- 6 cups thinly sliced onions
- 1 tablespoon sugar
- 1/2 teaspoon pepper
- 1/3 cup vegetable oil
- 6 cups beef broth
- 8 slices French bread, sliced and toasted
- 1/2 cup Parmesan cheese-grated
- 1/2 cup Gruyere cheese-shredded
DIRECTIONS:
In a Dutch oven, cook the onions, sugar and pepper in oil over medium-low heat for 1-4 hours, depending on how much carmelization that you like, stirring frequently. Add the broth; bring to a boil. Reduce heat; cover and simmer for 30 minutes.
Ladle soup into ovenproof bowls. Top each with a slice of toasted French bread; sprinkle with Parmesan and Gruyere. Broil 3-5 minutes or until cheese is melted-watch closely!
