French Potato Pie with Cheese and Chives

Pie can be baked earlier in the day and reheated at time of serving, though it is better when it is freshly baked.

Ingredientes

  • 1 deep dish nine inch frozen pie shell
  • 1 cup mashed potatoes (can use instant)
  • 2 cups cottage cheese
  • 1/4 cup cream cheese, 2 oz
  • 2 eggs
  • 1/2 cup sour cream
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup chopped chives
  • 1 T. chopped parsley
  • Salt and pepper to taste

Direcciones

  1. Prepare pie shell. baked in a 400* F oven for about 10 minutes or until very lightly browned.
  2. Mix remaining ingredients and beat until thoroughly blended.
  3. Pour mixture into prepared pie shell and place on cookie sheet. Sprinkle top with additional grated Parmesan cheese.
  4. Bake in a 350*F oven for about 40 to 45 minutes or until top is golden brown.
