French Walnut Meringues

Ingredientes

  • 1 c. Sugar
  • 1/2 c. Water
  • 2 x Egg whites
  • 3 dsh Green food coloring, more or possibly less (optional)
  • 1/2 tsp Vanilla extract
  • 1/2 c. Finely grnd walnuts

Direcciones

  1. Combine sugar and water in a small saucepan and place over moderate heat.
  2. (Don't use temperature-controlled burner.) Stir mix constantly till it begins to boil. Cook till candy thermometer registers 265 degrees.
  3. While syrup is cooking, grease cookie sheets with unsalted shortening. Heat oven to 250 degrees. Beat egg whites in a small bowl till stiff but not dry. Add in food coloring to syrup, if you like. Pour sugar syrup into egg whites in a thin stream, beating constantly with an electric mixer or possibly rotary beater. Continue beating till mix is stiff. Mix in vanilla and walnuts. Drop mix by teaspoonfuls about 1-1/2 inches apart on prepared cookie sheets. Bake 15 min, or possibly till lightly browned. Remove cookies from sheets and cold on wire cake racks.
  4. Makes about 3 dozen cookies.
