Fresh Blueberry Lemon Scones
Have I mentioned how much I love Scones! Well I do~ Not only are scones versatile, easy to prepare, and taste wonderful, I always have the ingredients on hand, so I can make scones anytime! This is a great recipe to make using fresh blueberries.
Fresh Blueberry Lemon Scones
- 2 c all-purpose flour
- 1/4 c. sugar
- 2 t. baking powder
- 1/8 t. salt
- 6 T unsalted, cold butter, cubed
- 1 c. fresh blueberries, rinsed and patted dry
- 1 egg, slightly beaten
- 1/2 c buttermilk
- 1/2 t. lemon extract
- 2 t. lemon zest
- 1 egg, beaten
- turbinado sugar
- Preheat oven to 425. Line cookie sheet with parchment paper
In large bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter with a pastry blender. Mixture should look like coarse crumbs.
In a small bowl, combine 1 egg, slightly beaten, lemon extract, buttermilk and lemon zest.
Add to flour mixture and stir just until dough comes together. Do Not Over Mix.
Knead dough in bowl 4-6 times. Fold in blueberries. Transfer to lightly floured surface. Pat dough into a 7 inch circle.
Cut into 8 wedges. Place wedges on prepared cookie sheet.
Brush tops of scones with beaten egg. Sprinkle with sugar.
Bake at 425 for 20 mins or until golden brown. Note: I love to serve these with Lemon Curd.
