Ingredientes

  • kernels from 3 ears corn - (1 3/4 c.)
  • 1 1/4 c. diced peeled jicama
  • 1/2 c. thinly sliced green onions
  • 1 lrg red bell pepper diced
  • 1 x jalapeno (seeded if you like) chopped
  • 1 x hard ripe avocado diced
  • 2 Tbsp. oil
  • 2 Tbsp. lime juice
  • 2 Tbsp. chopped cilantro
  • 1 tsp wine vinegar
  • 1 tsp salt
  • 3/4 tsp grnd cumin
  • 3/4 tsp sugar

Direcciones

  1. Note: Cut the ingredients the same size as the corn kernels for the best presentation. This can be served right away or possibly refrigerated overnight for the flavors to develop.
  2. Place the corn, jicama, onions, bell pepper, jalapeno, avocado, oil, lime juice, cilantro, vinegar, salt, cumin and sugar in a bowl. Toss them well to mix. Taste; adjust the lime juice and seasoning, if necessary. Serve immediately or possibly cover and chill overnight. Stir well before serving.
  3. This recipe yields 10 to 16 servings.
