I love when this things happen, colleagues and/or neighbours give you something that you don’t normally use and you have to create something out of that without any recipe plan. This is what happened when I was given a ton of delicious fresh figs where I got myself into a challenge created by myself to have my own invention test.

For an invention test this is quite hard because I don’t have the luxury of having a full pantry like the ones you see in Master Chef so what I made was based on what I currently had on my pantry the day I prepared this.

So let’s go to what I had prepared. Figs are naturally sweet but adding more sweetness to that will not hurt in fact it will complement the fruit especially when honey is used hence some to my dish. Honey alone is good but what if we caramelize it further and make it a bit salty like salted caramel? This eventually gives it a different depth of flavour enhancing the properties of honey. The saltiness is not enough so I also threw in some bacon and goats cheese feta, not just for flavour but for texture as well. The end result was great, it’s quite simple to make and it looks elegant for a desert.

I still have some left over figs now watch this space and see what I made with them.

Fresh Figs with Goats Cheese Feta, Crispy Bacon and Burnt Salted Honey

In a saucepan add honey and salt, bring to a boil and simmer in low heat until it caramelizes and thickens further. Turn heat off. Score x marks on top of figs just until the middle, partly open each fig and place 3 pcs on each plate. Spoon 1.5 tbsp of the salted honey into the scores then insert some crispy bacon and top it with crumbled feta. Drizzle honey around the plate then serve. 3.5.3208
