Receta Fresh Frozen Strawberry Pie...In A Shot Glass...
Who's been to PF Chang's and had their dessert shots?!? Anyone? Buehler? Delectable mini desserts served in shot glasses - they are the perfect ending to a great meal...one where you've stuffed yourself silly and have no room whatsoever in your Calvin's for even the skimpiest piece of pie...the dessert shot is a two bite wonder and like Jell-O, there's always room for a shot!
Let's pretend that you didn't stuff your face, that you ate sensibly and still have room for pie and that you don't keep a zillion shot glasses on hand and only have a purchased graham cracker crust that needs filling...well, you're in luck, because this recipe will make the most delicious pie - high and fluffy and flavorful - you'll want seconds so best to forgo the bread at dinner, and possibly the potatoes, and while you're at it, skip the meat...heck, just push your plate aside and eat dessert first - remember what happened to those people on the Hindenburg who wanted to wait until they touched down before enjoying their dessert?!?
If you decide to make shots, you will have plenty of filling left over - put it in a bowl and every time you walk by the freezer reach in and have yourself a taste - there's nothing wrong with that! Now what about the crust...simple - you make a graham crust and then press it into the bottom of your shot glasses (tamping it down with the end of a wooden spoon). Scoop the filling into a plastic bag to fill the shots without making a mess - press a sliver of strawberry on top and they're ready to be frozen into submission...creamy smooth with fresh strawberry bits throughout, it will melt on your tongue causing your eyes to roll back into your head - do not operate heavy machinery while eating!
Aren't they so, so pretty?!? I had to make more than ONE type of dessert shot...because really, if you have room for two bites of dessert then you have room for six, am I right? So I made Chocolate Mousse shots (I used the recipe for my Chocolate Cherry Mousse but eliminated the cherry flavoring) and I also made Vanilla Bean Lemon Cream shots (I used the filling part of the Meyer Lemon Cream Crepe Cake recipe, adding the scrapings of one vanilla bean to the filling...in a word? Magnifique!)
Two bites per shot - the perfect diet dessert...after the perfect diet dinner...
- Fresh Frozen Strawberry Pie ~ From Pots and Pins
- 1 (deep dish 10-inch) purchased graham cracker crust
- (If making crust for shots, use 5 graham crackers, crushed, and 1/2 stick melted butter, mix and press into 16 shot glasses.)
- Filling:
- 1 1/2 cups sliced fresh strawberries, stems and hulls removed
- 1 cup sugar
- 1 egg white
- 1 cup sour cream
- strawberries for garnish
In the bowl of an electric mixer combine strawberries, sugar and egg white. Mix on high speed until soft peaks form, about 7 to 8 minutes. (You might not think these few ingredients would whip up into anything - but they do - and it's amazing!) With a wooden spoon, gently fold in sour cream, mixing until there are no streaks. If making a pie, mound filling into pie shell and place in freezer for at least 4 hours or overnight. (Will keep for a week in the freezer.) If making shots, spoon filling into a plastic Zip-lock style bag and snip off one of the corners, squeeze filling into shot glasses. Set shots into freezer - they will freeze faster than a pie so they'll be ready to eat in about 3 hours!
Note: This pie can be made with frozen strawberries, substitute 1 package (10 oz.) of frozen strawberries for fresh. Allow to thaw but do not drain and reduce sugar to 1/2 cup.
