Fresh Orange Pineapple Coconut "Cream" Pie

Ingredientes

  • 1 lrg eating orange
  • 1 x graham-cracker pie shell or possibly 9-inch ready-to-fill commercial or possibly homemade
  • 1 c. cool water divided
  • 1 env plain gelatin
  • 1 c. water boiling
  • 1 c. unsweetened pineapple juice canned not fresh or possibly frzn
  • 1 c. low-fat cottage cheese uncreamed
  • 1/4 tsp coconut flavoring (optional)
  • 1 Tbsp. orange peel grated from orange
  • 1 pkt instant vanilla pudding mix sz
  • 2 Tbsp. unsweetened dry coconut shredded

Direcciones

  1. Peel the orange and cut into chunks. Pick out seeds, if any, with the top of a sharp knife as you slice the orange. Arrange the orange chunks in a single layer in the bottom of the pie shell. Set aside.
  2. Meanwhile, put 1/4 c. cool water in the blender container and sprinkle on the gelatin. Wait 1 minute, till softened. Then add in boiling water; cover and blend on high speed till gelatin dissolves (scrape blender jar). Add in remaining 3/4 c. cool water, the pineapple juice, and cottage cheese; cover and blend smooth. Add in coconut flavoring, if you like, grated orange peel, and pudding mix; cover and blend smooth.
  3. Mound mix over orange chunks in pie shell. Sprinkle the top lightly with shredded coconut. Refrigerateseveral hrs till set.
