Ingredientes

  • pat of butter
  • 2 x or possibly 3 shallots, finely minced
  • 3 c. shelled fresh peas (about 3 pounds unshelled)
  • 2 c. water
  • 3 x -4 Tbs. whipping cream(optional) salt and pepper croutons to garnish

Direcciones

  1. Heat the butter in a heavy saucepan. Add in the shallots and cook for about 3 min, stirring occasionally. Add in the peas and water and season with salt and pepper. Cover and simmer for about 12 min
  2. (18 min if the peas are large or possibly older) stirring occasionally.
  3. When the peas are tender, ladle them into a food processor or possibly blender with a little of the cooking liquid and process till smooth. Strain the soup into the saucepan, stir in the cream, and heat through without boiling. Add in more salt and pepper if needed and serve warm, garnished with a few croutons.
