%20but%20instead%20we%20have%20Roma%20tomatoes.%20%20Not%20a%20bad%20thing%20of%20course,%20just%20not%20the%20ones%20I'd%20eat%20for%20a%20snack%20all%20by%20themselves.%3C/p%3E%3Cp%3EThe%20other%20day%20I%20was%20chatting%20with%20my%20friend,%20who%20lived%20in%20Rome%20for%2013%20years,%20and%20she%20mentioned%20making%20a%20nice%20homemade%20sauce%20with%20all%20my%20tomatoes.%20%20Hmmmm...haven't%20done%20that%20yet!%20%20And,%20as%20a%20bonus,%20we%20got%20lucky%20and%20the%20local%20grocery%20store%20had%20some%20fresh%20pasta%20in%20stock.%20%20Fresh%20sauce,%20fresh%20(well%20semi%20fresh)%20ravioli.%20%20Perfect!%3C/p%3E%3Cp%3EI%20Googled%20a%20bunch%20of%20recipe%20ideas%20for%20the%20sauce.%20%20There%20are%20more%20ways%20to%20make%20tomato%20sauce%20than%20I%20would%20have%20guessed!%20%20But,%20I%20wanted%20simple...pure.%20%20I%20wanted%20the%20tomatoes%20to%20shine.%20%20So,%20with%20a%20few%20ingredients%20and%20a%20bit%20of%20time...I%20ended%20up%20with%20a%20lovely%20sauce.%3C/p%3E%3Cp%3ESince%20then,%20I've%20made%20fresh%20sauce%20one%20other%20time...with%20the%20same%20wonderful%20results.%20%20Keep%20the%20tomatoes%20coming!%20(side%20note:%20%20if%20you%20ever%20pop%20into%20the%20store%20and%20find%20tomatoes%20on%20sale,%20but%20maybe%20they%20look%20like%20they're%20on%20their%20last%20leg...buy%20them!%20%20yep%20you%20read%20right.%20%20Those%20overripe%20beauties%20will%20make%20you%20a%20beautiful%20sauce!%20%20And%20save%20keep%20some%20money%20in%20your%20pocketbook!)%3C/p%3E%3Cp%3E*important%20tip:%20%20take%20the%20time%20to%20peel%20and%20seed%20the%20tomatoes.%20%20Otherwise%20your%20sauce%20won't%20be%20nearly%20as%20good.%20%20It's%20not%20hard%20and%20just%20takes%20a%20few%20extra%20minutes%20of%20your%20prep%20time...it's%20worth%20it.%20%20Trust%20me.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20Smitten%20Kitchen:%3C/p%3E%3Cp%3EHow%20to%20peel%20the%20tomatoes:%20Bring%20a%20pot%20of%20water%20to%20boil.%20Cut%20a%20small%20X%20at%20the%20bottom%20of%20each%20tomato.%20Blanche%20the%20tomatoes%20in%20the%20boiling%20water%20for%2010%20to%2030%20seconds,%20then%20either%20rinse%20under%20cold%20water%20or%20in%20an%20ice%20water%20bath.%20Peeling%20the%20tomatoes%20should%20now%20be%20easy.%20If%20they%20aren't%20coming%20off%20easily,%20just%20pop%20them%20back%20in%20the%20water%20for%20another%20few%20seconds.%20Discard%20the%20skins.%3C/p%3E%3Cp%3ESeeding:%20%20With%20my%20plum%20tomatoes,%20I%20halve%20each%20lengthwise.%20(If%20using%20beefsteak%20or%20another%20round%20variety,%20quarter%20them).%20Squeeze%20the%20seeds%20out%20over%20a%20strainer%20over%20a%20bowl%20and%20reserve%20the%20juices.%20Discard%20seeds.%20%20Either%20coarsely%20chop%20you%20tomatoes%20on%20a%20cutting%20board%20or%20use%20a%20potato%20masher%20to%20do%20so%20in%20your%20pot,%20as%20they%20cook.%3C/p%3E%3Cp%3EThe%20vegetables:%20I%20chose%20to%20chop%20them%20all%20up%20fairly%20small.%20%20You%20can%20also%20grate%20them%20if%20you%20want.%3C/p%3E%3Cp%3EFor%20the%20sauce:%20Heat%20olive%20oil%20in%20a%20large%20pot%20over%20meduim.%20Cook%20your%20onions,%20carrots,%20celery%20and%20garlic,%20if%20you%E2%80%99re%20using%20them,%20until%20they%20start%20to%20brown,%20about%2015%20minutes.%20This%20brings%20out%20a%20great%20flavor.%20Add%20your%20tomatoes%20and%20bring%20to%20a%20simmer,%20lowering%20the%20heat%20to%20medium-low%20to%20keep%20it%20at%20a%20gentle%20simmer.%20%20Simmer%20your%20sauce,%20stirring%20occasionally.%20Anywhere%20from%2045%20minutes%20to%20an%20hour.%20%20(or%20longer%20if%20you%20have%20the%20time)%3C/p%3E%3Cp%3EAbout%2015%20min%20before%20serving,%20add%20the%20basil.%3C/p%3E%3Cp%3EIf%20it's%20too%20thick,%20add%20some%20of%20your%20reserved%20juices.%20%20If%20it's%20too%20lumpy%20you%20can%20use%20your%20immersion%20blender.%20%20Add%20salt%20to%20taste%20and%20then%20finish%20with%20few%20more%20slivers%20of%20fresh%20basil.%20%20We%20like%20to%20add%20some%20fresh%20grated%20parm%20on%20top%20too.%20%20:)%3C/p%3E){kind=link}
