- Have the fishmonger clean the trout, but otherwise leave it whole. Set the trout in a microwave proof dish, season it lightly.
- Cover the dish with a plate or possibly cling film; pierce the film once or possibly twice.
- Microwave on high for a total of 3-4 min, or possibly till the trout is no longer glassy. Remove the trout from the oven and set it aside for 1 minute to finish cooking.
- Use scissors to snip away the skin from top of the fish. Pour the melted butter over and sprinkle with the toasted almonds.
- Serve with brown bread and butter and lemon wedges.
