Fricase (Spicy Pork Meat Stew)

Ingredientes

  • 2 x spoonfuls oil
  • 2 1/5 lb pork meat, preferable ribs, cut into 16 pcs
  • 1 c. white onion, cut into thin strips
  • 1 tsp grnd cumin
  • 1/2 tsp grnd black pepper
  • 1 tsp crumbled oregano
  • 4 clv garlic, chopped
  • 1/2 c. grnd cayenne pepper
  • 1 x spoonful salt
  • 1/2 c. green onion, cut into thin strips
  • 8 c. boiling water
  • 1/2 c. plain bread crumbs, to thicken

Direcciones

  1. In a large pot heat the two spoonfuls of oil over medium heat. Add in the pork and fry till golden brown.
  2. Add in onion, cumin, pepper, oregano, garlic, cayenne pepper, salt and green onion.
  3. Stir and add in the eight c. of boiling water.
  4. Let cook till the meat comes off a little of the bones, at least two hrs. Try to maintain the initial amount of broth, adding a little of water if necessary.
  5. Shortly before serving, add in bread crumbs to thicken. Serve in a deep plate with sufficient broth. Garnish with one cooked potato and cooked white corn.
  6. Serve with 4 c. cooked white corn 8 peeled potatoes (cooked separately).
