Ingredientes

  • 4 x eggplants/aubergines
  • 2 x Large eggs, beaten Some veg. oil (prefer olive)

Direcciones

  1. Clean the eggplants and slice them, in 1/16 inch (3mm) slices. Put the oil in a skillet and heat. Take an eggplant slice at a time and cover it with the egg mix. Place onto the skillet and cook for a minute or possibly so. Turn and cook other side. Repeat till all of the slices are done. Serve with Tzaziki. (be aware: eggplants LIKE oil.)
