Receta Fried Corn
My Grandma made this old-fashioned, home-style favorite with cream but this recipe uses canned evaporated milk, to cut a few calories:) Anyway you make this fried corn recipe, it's delicious!!
For an added treat, serve fried corn over mashed potatoes with a sprinkle of crispy bacon....which of course defeats the purpose of using canned evaporated milk and cutting a few calories:)
- 6 fresh ears of corn or 3 cups fresh off the cob corn, frozen
- 4 strips bacon, chopped
- one small onion, chopped
- 1/2 cup chopped sweet red pepper
- 1 t all-purpose flour
- 1/4 t salt
- 1/8 t pepper
- 1/4 t sugar
- 1/2 cup canned evaporated milk or cream
- Mashed potatoes, optional but delicious:)
- If using fresh ears of corn, cut kernels off the cob. Measure 3 cups
- If using frozen, thaw corn
- In a 10-inch frying pan, cook bacon over medium heat until crisp
- Remove bacon, reserve drippings
- Drain the bacon on paper towels; set aside
- Add the corn, onion and red pepper to reserved bacon drippings
- Cook over medium heat; stirring constantly for 8 minutes or until corn is tender and lightly browned
- Stir in the flour, salt, pepper and sugar
- Add the milk
Cook, stirring constantly, until mixture starts to thicken
Cook and stir for 2 minutes more or until thickened
Sprinkle with the bacon pieces
Makes 4 servings

Saturday is a Day for reflection~
My hubby will return to work on Monday, after having the week off. We had hoped to get yard work done but unfortunately it rained all week. Despite the rain, it was a very relaxing and quiet vacation. Sometimes spending a week at home is the best place to "vacation"~
