Fried Eggplant (Pritong Talong)

A very easy side dish recipe for Eggplant lovers. This is usually what I think of when I need to have a quick side dish to pair with chicken or fish.

Ingredientes

  • 3 pcs Talong (Eggplant)
  • Salt
  • Pepper
  • Canola Oil

Direcciones

  1. Cut the Eggplants, halved and cut in 3 inches lengths. Wash thoroughly.
  2. Brush the eggplant with oil, then season with salt and pepper.
  3. Heat up the pan on medium(use a Teflon pan if available), put the remaining tablespoon oil on the pan to coat it.
  4. Put the eggplants in, cut side down first and leave it for 3-4 minutes or until golden brown.
  5. Flip to cook other side. If it's soft and no resistance to the touch, it should be ready.
  6. Serve as it is or with a lemon/soy sauce dip.
