Ingredientes

  • 1 med Eggplant
  • 1 tsp Salt
  • 1/2 tsp Turmeric
  • 1/8 tsp Cayenne Black pepper Oil for shallow frying
  • 6 x Lemon wedges

Direcciones

  1. Cut eggplant into quarters lengthwise & then cut crosswise into 1/2" thick wedges.
  2. Mix together salt, turmeric, cayenne & black pepper in a small bowl.
  3. Sprinkle over the eggplant & mix wll.
  4. Heat oil in a skillet over medium heat. When warm, saute/fry the eggplant in batches on both sides till reddish brown. Remove & drain on paper towels. Repeat till all eggplant wedges have been cooked.
  5. Serve garnished with lemon wedges.
