Fried Olives
Not so long ago, I found gigantic olives at my not-so-local big box store. Since we love olives around here, I knew they would get eaten, but I also wanted to make something with them. Then it hit me–I always wanted to make deep fried olives and I happened to have some gorgonzola cheese on hand, so I stuffed a few olives, fried them up and promptly ate them. End of story. I used Panko (Japanese bread crumbs) and they were so incredibly crunchy! And as I found, they are also good cold, so make them up ahead and serve them up at your next party..
Fried Olives
Ingredients:
- 1 ounce Gorgonzola cheese-at room temperature
- 1/4 cup ricotta cheese-at room temperature
- 20 large green olives-pimento removed
- 1/2 cup flour
- 1 egg-beaten
- 1/2 cup Panko bread crumbs seasoned with salt and pepper
- Vegetable or Canola oil for frying
Directions:
In a small bowl, combine the cheeses. Spoon into a small zip-loc bag and snip the corner off of one side. Pipe the cheese mixture into each olive.
Put the flour, egg and Panko in 3 separate small bowls. Using 2 small forks, roll the olives in the flour, then the egg, then the Panko. Place on a small plate.
In a medium saucepan, pour in about 1 1/2 inches of oil. Heat over medium-high until it's about 350 degrees. In batches of about 5 at a time, fry the olives for about 25-30 seconds, flipping half way through. Drain on a plate with paper towel.
*Don't fry too many at a time, if your oil is hot, they will fry up VERY fast using the Panko.
**Feel free to season these with anything you like, I have added lemon peel cayenne and garlic before.
