Receta Fried Pizza ( Pizza Fritta )

- Put the flour in a large bowl.
- Dilute the yeast in water and leave for a few min.
- Add in this the salt and a little more water to the flour to obtain a fairly soft dough.
- Cover with a kitchen cloth and leave to prove for I hour by that time the dough will have doubled in size.
- Gently heat the tomato sauce.
- Meanwhile take a piece of dough about the size of an egg and roll it out on a noured work surface.
- Heat the oil in a pan and when it is warm add in the pizza and fry on each side till golden brown.
- Place on a plate and whilst still warm pour on a little of the tomato sauce and spread proportionately. Add in the Parmesan and some basil leaves.
- These are very moreish!
- If you try this for a pary make sure your guests can come into the kitchcn to keep you company otherwise youll be in there alone all night.
- Makes 6 x 20cm pizzas
