Fried Prawn Mee

Its a must try; crunchy prawns seated on top of a pile of yellow noodles; fried with eggs and cabbage.

Ingredientes

  • 200g (about 2 1/2 cups) yellow mee/noodles - lightly blanched in hot water and rinsed with cold water.
  • 4 pcs (or as you prefer) medium size prawns - remove the veins, trim the head but keep everything else intact.
  • 2 eggs
  • 5 garlic - chopped
  • 1/4 cabbage - shredded/sliced
  • 1 tbsp sweet soy sauce (don't have; double the dark sauce and
  • sprinkle a bit of sugar)
  • 1 tbsp dark soy sauce
  • 3-4 sprigs spring onions
  • 1/4 cup oil
  • Pepper to taste
  • Salt to taste (use sparingly because soy sauce is already salty)

Direcciones

  1. Mix in a bit of salt and pepper over the prawns.
  2. Heat oil and when heated, fry prawns till crispy and cooked.
  3. Remove and keep aside.
  4. In the same oil, saute garlic.
  5. Add noodles/mee and cabbage and season with soy sauce, salt and pepper (optional).
  6. Stir to combine everything.
  7. Push mee aside and in the centre of the wok, break eggs.
  8. (Note: if needed, pour oil).
  9. Gently stir and fold into the mee.
  10. Lastly put in spring onion; stir and remove.
