Fried Shrimp 'N' Apricot Sauce

Ingredientes

  • 1 1/2 c. all-purpose flour
  • 1 Tbsp. paprika
  • 1 tsp freshly-grnd white pepper
  • 1/2 tsp garlic pwdr
  • 1/2 tsp dry Italian seasoning
  • 1 can beer - (12 ounce)
  • 2 lb unpeeled medium-size fresh shrimp Vegetable oil for frying
  • 1 c. apricot preserves
  • 1 jar diced pimiento - (4 ounce) liquid removed
  • 2 1/2 Tbsp. white vinegar

Direcciones

  1. Combine first 6 ingredients in a medium bowl; stir till smooth. Let batter stand 30 min.
  2. Peel shrimp, leaving tails intact; devein, if you like. Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip shrimp into batter, and fry, a few at a time, till golden brown. Drain on paper towels. Serve with Apricot Sauce.
  3. For Apricot Sauce: Combine all ingredients in a saucepan. Bring to a boil over medium heat; reduce heat, and simmer 3 min, stirring occasionally. Cover and chill.
  4. This recipe yields 4 servings.
