Fried Spinach (Rau Muong Xao)

Ingredientes

  • 6 ounce Rump steak
  • 1 x Medium onion
  • 1 tsp Black pepper
  • 1 1/2 tsp Fish sauce (nuoc mam)
  • 1 tsp Cornstarch
  • 1 x Fresh spinach
  • 1 x Large tomato
  • 1 x Clove of garlic
  • 3 tsp Oil

Direcciones

  1. Trim any fat from steak. Sliced thinly. Chop onion finely and combine with meat, 1/2 tsp. pepper, 1/2 Tbsp. fish sauce and cornstarch. Rinse spinach and cut each leaf into 3 pcs. Slice tomato into thin wedges and crush garlic. Heat 1 1/2 Tbsp. of oil in a frying pan. Add in remaining garlic and stir fry till fragrant. Add in spinach and stir fry for 3 min. Add in remaining fish sauce and tomato. Stir fry 2 min, then remove to a heated serving platter. Heat remaining oil in frying pan. Add in meat and stir fry for 5 min. Add in 2 Tbsp. waterif meat sticks to pan. Remove meat from pan and sprinkle over spinach. Sprinkle with pepper and serve.
