Rarely do I fry; however, as a child I remember my grandma making fried zucchini every summer and some traditions must carry on :) I used coconut oil (extra virgin) because that is the only oil I cook with and panco bread crumbs (in my pantry), these were the only alterations. The frying tips were very helpful to me (because I rarely fry) and the zucchini turned out fabulous; nice and crunchy with a scrumptious taste. My significant other usually adds salt/pepper to everything but not these, he even refused the ranch dressing to dip the zucchini in which is almost unheard of....totally impressed with this recipe and the tips. This is my 1st food review at the age of 55, I search various recipe/food sites often.
