Ingredientes

  • 6 x Large eggs
  • 1/2 c. Parmesan cheese, grated Salt and pepper, to taste
  • 3 x Tomatoes, peeled and seeded
  • 1 x Green bell pepper, diced
  • 1 x Red bell pepper, diced
  • 1 x Onion, diced (up to 2)
  • 2 x Cloves garlic, chopped
  • 1/2 c. Green olives, seeded and sliced
  • 1/2 Tbsp. Oregano Extra virgin olive oil Salt and pepper, to taste

Direcciones

  1. Cook onions in oil till soft.
  2. Stir in garlic and bell peppers,cook 3 min.
  3. Stir in diced tomatoes, olives and seasonings. Cook a few min to reduce liquid.
  4. 4.Whip Large eggs. Stir in cheese, salt and pepper.
  5. Stir in filling into Large eggs.
  6. Oil a baking dish or possibly Pyrex.
  7. &. Pour Large eggs mix into dish.
  8. Bake in 350 oven for 20 to 25 min.
  9. 10.Serve sliced at room temperature.
  10. NOTES : Other ingredients may be used in the filling , such as mushrooms, asparagus, artichoke, parsley, green onions and so on.
