Ingredientes

  • 4 lrg Green tomatoes seeded, cored, and diced
  • 1 x Yellow pepper seeded, diced
  • 1 Tbsp. Minced coriander
  • 1 x Jalapeno pepper seeded, diced Salt to taste Freshly-grnd black pepper to taste
  • 1 tsp Honey
  • 2 tsp Rice wine vinegar
  • 6 lrg Portabello mushrooms, (Phillips Brand) stems removed
  • 1/2 tsp Peanut oil
  • 6 x Buffalo burgers - (8 ounce ea)

Direcciones

  1. Preheat grill.
  2. Mix tomatoes, onions, peppers, coriander, jalapeno and 1/4 tsp. salt in a bowl. Allow to sit for 1/2 hour. Pour off juice and add in honey and vinegar. Chill 1/2 hour.
  3. Rub mushrooms with oil and season with salt and pepper. Grill on both sides till done. Season burgers and grill on both sides till medium-rare.
  4. Layer with portabello on the bottom, salsa, then meat and topped with additional salsa. Add in coriander to garnish.
  5. This recipe yields 6 servings.
