Ingredientes

  • 4 lrg Green tomatoes, seeded, cored and diced
  • 1 x Yellow pepper, seeded and diced
  • 1 Tbsp. Minced coriander
  • 1 x Jalapeno pepper, seeded and diced Salt and pepper
  • 1 tsp Honey
  • 2 tsp Rice wine vinegar
  • 6 lrg (phillips brand) portabello mushrooms, stems removed
  • 1/2 tsp Peanut oil
  • 6 x Buffalo (8-oz) burgers

Direcciones

  1. Preheat grill.
  2. Mix tomatoes, onions, peppers, coriander, jalapeno and 1/4 tsp. salt in a bowl. Allow to sit for 1/2 hour. Pour off juice and add in honey and vinegar. Chill 1/2 hour.
  3. Rub mushrooms with oil and season with salt and pepper. Grill on both sides till done. Season burgers and grill on both sides till medium rare.
  4. Layer with portabello on the bottom, salsa, then meat and topped with additional salsa. Add in coriander to garnish.
