Receta Frozen Lemon Pudding

- Refrigeratecan lowfat milk in ice tray till almost frzn around edges. In large bowl mix egg yolk, 3 Tbsp. sugar, lemon rind and 1 Tbsp. lemon juice.
- Beat till stiff, egg white and gradually beat in 2 Tbsp. sugar. Fold egg white mix into egg yolk mix. Whip lowfat milk in cool bowl till fluffy. To this add in 1 1/2 Tbsp. lemon juice and whip stiff. Fold into egg mix. Put into ice tray and sprinkle graham cracker crumbs over top.
- Freeze in ice tray. Don't stir.
- Serves 4.
