Frozen Mango Yogurt Dessert

Celebrations, friends, good times…what comes to your mind, Desserts? A giant Chocolate Mountain with creamy Nutella river flowing across a garden of mouth watering goodies…Huh..too much for one who is not blessed with a sweet tooth I overheard. But I love to bake goodies & make deserts and get a sense of contentment sharing them with family & friends. The last time I made this simple yet fabulous dessert was when a foodie friend Sra came home to share a quick lunch and some wonderful time together. If marriages are made in heaven so are prized friendships!
This is one of those simple, quick and delicious desserts I could think of making with less efforts and time at hand. This rich and creamy Yogurt fruity dessert could make a perfect treat for any bridal shower party.
Ingredients;
(4 servings)
- 1 cups thick yogurt/curd
- 1 cup Frozen/fresh mango puree
- 1/2 cup frozen/fresh Strawberries
- 1/2 cup fresh cream (optional)
- 1/2 cup sugar
- 1 tbsp. gelatin
- 2 tbsp. water
- 1 tsp. Vanilla essence
Method; Puree the frozen mangoes with sugar or peel and slice fresh mangoes than puree it with sugar. Clean strawberries and crush it sightly to make them mushy. I freeze mangoes during the season by chopping them into small pieces and freezing them in a zip lock bag.
Soak gelatin in water for 10 minutes, it will bloom or absorb all the water and spread, add a tsp. of warm water in the gelatin mixture if it becomes thick to make it liquid. Mix the gelatin with the mango puree.
Crushed strawberries..
To make thick curd you can follow these steps;
Add 2 tsp. or more of powder milk in the milk set for curdling.
Use any low fat curd, tie it in a muslin cloth and hang it for 8-10 hours to get thick creamy curd.
Use Greek style yogurt or Amul yogurts if you can get it.
Whisk the cream till it becomes slightly fluffy and light.
In a large vessel add mango puree mixed with gelatin, curd/yogurt, cream and vanilla essence. Mix it well to incorporate all the ingredients together.
Take a food grade plastic container and pour the above yogurt fruit mixture add the crushed strawberries over it and refrigerate it till set. Serve the chilled Mango yogurt desert in individual serving bowls or tall fancy glasses.
Notes;
If the curd/yogurt you are using in the recipe is thick you can avoid gelatin & cream which are used to thicken the dessert.
Use Papaya or Banana instead of mango for a delightful twist to the recipe.
You can replace low fat milk if you can’t get yogurt in the recipe.
Frozen mangoes give a crunchy texture to the dessert.
