Receta Frozen Mojito

This Frozen Mojito is fun, festive, frothy, and refreshing.

I am not quite sure why we don’t take advantage of travel as much as we should? Well, I take that back. I do know why. Life, commitments, and of course money. I dine a fair amount of travel, but not nearly as much as I would have liked at this point in my life. But I can hold on to all the memories of the travel of my past. Mexico is one of them. Many of the pools at the high-end hotels actually have tiki bars right in the pool.

On my first visit to Mexico, we traveled to Puerto Vallarta. For seven days straight I don’t think I ever left the pool. And of course, when we got thirsty we just swam up to the bar. I was drinking margarita’s. Between the sun, the water and the salty rimmed margarita glasses, my lips got an incredible injection of “collagen” . They puffed up like a blowfish. That might be the last time I enjoyed a salted margarita.

Nowadays, the bars step it up a notch and serve lots of frozen beverages. Mojito’s are now quite popular. That’s when I decided to try my hand at a frozen Mojito.

The result: a frothy, mint-flecked, light, citrusy, and refreshing cocktail.

Add 1 teaspoon of the Mint Syrup to each of two chilled cocktail glasses and set aside. Add the rum, lime juice and ice to a blender and blend until you achieve a frothy consistency. Divide the mixture evenly between the glasses and top each with an additional teaspoon of the Mint Syrup. Garnish each glass with a mint sprig. 3.3.3077
