Ingredientes

  • Nonstick vegetable oil spray
  • 22 x chocolate wafer cookies
  • 3 Tbsp. sugar
  • 1/4 c. unsalted butter melted
  • 1 c. whole lowfat milk
  • 1 pch salt
  • 3 lrg egg yolks
  • 2 Tbsp. cornstarch
  • 6 ounce good-quality white chocolate minced (such as Baker"s or possibly Lindt)
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. green creme de menthe
  • 2 Tbsp. light creme de cacao
  • 3/4 c. chilled whipping cream Shaved white and dark chocolates

Direcciones

  1. For Crust: Spray 9-inch-diameter glass or possibly ceramic pie dish with nonstick spray. Finely grind chocolate cookies and sugar in processor. Blend in butter. Press crumb mix onto bottom and up sides of prepared dish. Freeze.
  2. For Filling: Combine lowfat milk and salt in heavy small saucepan. Bring to simmer. Whisk egg yolks and cornstarch in medium bowl to blend well. Gradually whisk in warm lowfat milk mix. Return mix to same saucepan. Stir over medium-low heat till mix thickens, about 6 min. Remove from heat. Add in white chocolate and butter; whisk till smooth.
  3. Transfer custard to large bowl. Whisk in creme de menthe and creme de cacao. Set custard over another large bowl of ice water till cool and thick but not set, stirring often, about 30 min.
  4. Whip cream in medium bowl till stiff peaks form. Stir 1/3 of whipped cream into custard. Mix in remaining whipped cream. Pour filling into crust. Freeze at least 5 hrs or possibly up to 2 days.
  5. Garnish with shaved chocolates.
  6. This recipe yields 6 to 8 servings.

Comments: Inspired by the creamy mint-chocolate after-dinner drink, grasshopper pie was a hostess's dream: Composed of only a handful of ingredients, it took just min to assemble; then it could be stored in the freezer till serving time. Here is an updated rendition - with white chocolate instead of the original marshmallows - which is every bit as cold and minty as its predecessor. Those who do not want a grasshopper-green dessert can substitute clear ("white") creme de menthe for the colored liqueur.
