Ingredientes

  • 3 med Large eggs
  • 3 ounce Caster sugar
  • 3 ounce Plain flour
  • 1 can Red cherries
  • 2 Tbsp. Black cherry jam
  • 1/2 pt Double cream Optional - 2 tbsp brandy

Direcciones

  1. Whisk together the sugar and Large eggs till double the size. Mix in the flour till there are no luombps and pour into a well greased 8 inch sponge tin and bake at 220 C/ Gas 7 for 8-10 min. Remove and leave to cold.
  2. Gently heat the black cherry jam. To a knob of butter add in the cherries and the brandy and flambe for a couple of min.
  3. Add in the warmed cherries to the sponge and add in any juices to the black cherry jam. Spoon the waremd jam over the cherries.
  4. Around the edge decorate the flan with whipped double cream and serve.
