Ingredientes

  • 1/4 c. confectioners' sugar
  • 1/2 tsp grnd cinnamon
  • 1 1/3 c. all-purpose flour plus more for dredging
  • 2 x egg yolks beaten
  • 3/4 c. flat pale ale
  • 2 x egg whites
  • 1 pch cream of tartar
  • 1 pch salt
  • 1 Tbsp. sugar
  • 2 x Granny Smith apples peeled, cored, and cut into 1/4" rings
  • 2 x Bartlett or possibly D'Anjou pears peeled, cored, and each cut in 8 wedges Canola oil for frying

Direcciones

  1. In a small bowl combing the confectioners' sugar and the cinnamon, set aside.
  2. In another mixing bowl, stir together the flour and egg yolks. Gradually stir in the beer. Set aside in the refrigerator for at least 2 hrs, but preferably overnight (up to 12 hrs).
  3. Heat 1-inch canola oil in a skillet to 375 degrees.
  4. Whip the egg whites, cream of tartar, salt, and sugar to soft peaks, and mix in.
  5. Dredge the fruit in flour. Dip the floured fruit in the batter and fry till crisp. Drain on paper towels, and dust with the reserved confectioners' sugar/cinnamon mix.
  6. This recipe yields 4 servings.
