Fruit N Fiber Overload Muffins

Ingredientes

  • 1 c. apple grated
  • 1/2 c. banana mashed
  • 2 x Large eggs
  • 1 1/2 c. buttermilk
  • 1/2 c. molasses
  • 1/4 c. vegetable oil
  • 3 c. 100% Bran cereal
  • 1 1/2 c. whole wheat flour
  • 1/3 c. granulated sugar
  • 1 tsp baking pwdr
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 c. blueberries or possibly cranberries

Direcciones

  1. Preheat oven to 375F. Grease 12 muffin c. or possibly coat with cooking spray.
  2. In a medium-sized mixing bowl, beat Large eggs. Stir in buttermilk, molasses, oil, grated apple, and mashed banana.
  3. Measure bran, flour, sugar, baking pwdr, baking soda, and cinnamon into a large mixing bowl. Stir with a fork till mixed, then, make a well in center. Pour in fruit mix, stirring just till combined. Stir in blueberries or possibly cranberries.
  4. Immediately spoon batter into muffin c.. Bake in center of 375F oven till golden brown and a cake tester inserted into center of a muffin comes out clean, about 30 min. Remove from oven and let stand for 5 min.
  5. Then turn out onto a cooling rack. Serve hot. Store muffins in a sealed bag at room temperature for up to 2 days. For longer storage, chill muffins or possibly preferably freeze.
