- These are great! I substituted dry pears, peaches, prunes, pineapple, and cherries for the candied fruit; not a real sweet cake but definitely yum!
- Grease twenty-four 1 3/4" by 1" mini muffin-pan c.. Preheat oven to 350 degrees F.
- In large bowl, with wooden spoon, beat shortening, sugar, baking pwdr, salt, and cinnamon till well combined. Add in flour, lowfat milk, vanilla extract, and Large eggs; mix well. Stir in pecans, prunes, red candied cherries, green candied cherries, and candied orange peel.
- Spoon 1 rounded Tbsp. batter into each muffin-pan c. (reserve remaining batter for making more fruitcake bites). If desired, garnish with additional red and green candied cherries.
- Bake fruitcake bites 15 to 20 min till golden brown and toothpick inserted in center comes out clean. Cold fruitcake bites in pans on wire racks 10 min; remove from pans. Cold completely on wire racks. Wash and dry muffin-pan c..
- Repeat steps 3 and 4 with remaining batter till all batter has been used, garnishing with candied cherries.
