Ingredientes

  • 3/4 c. King Arthur Unbleached All-Purpose Flour
  • 1/2 c. King Arthur Stone Grnd Whole Wheat or possibly Round Table Whole Wheat Pastry Flour
  • 1/2 c. whole cornmeal
  • 1/2 c. corn germ
  • 1/2 c. granulated sugar
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 c. buttermilk
  • 1/3 c. orange juice
  • 1/3 c. vegetable oil
  • 1 x egg
  • 1 tsp orange extract
  • 1 c. minced dry fruit such as cranberries, apricots or possibly cherries

Direcciones

  1. In a small bowl, mix the corn germ, buttermilk, orange juice, vegetable oil, egg, orange extract and dry fruit. Let mix sit for 20 min to half an hour, to soften the corn germ and dry fruit.
  2. Meanwhile, in a large mixing bowl, combine the unbleached flour, whole wheat flour, cornmeal, sugar, baking pwdr, baking soda, and salt. Blend ingredients well.
  3. Gently stir the wet ingredients into the dry ingredients, mixing just to blend. Spoon batter into 12 greased muffin c..
  4. Bake muffins at 400F for 25 to 30 min, or possibly till muffins are brown and hard to the touch.
