Ingredientes

  • 1 tsp extra virgin olive oil
  • 1 1/2 c. minced onions
  • 1 c. minced celery
  • 2 x cloves garlic chopped
  • 7 c. low-fat chicken broth
  • 28 ounce canned diced tomatoes undrained (1 can)
  • 10 ounce reduced-fat condensed tomato soup undiluted (1 can)
  • 2 c. dry lentils brown or possibly green
  • 2 c. minced carrots
  • 2 c. yams peeled, diced or possibly sweet potatoes
  • 2 tsp grnd oregano
  • 1 1/2 tsp grnd cumin
  • 1 tsp grnd coriander
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp grnd nutmeg
  • 2 c. fresh spinach packed & minced

Direcciones

  1. Heat extra virgin olive oil in a large soup pot over medium heat. Add in onions, celery, and garlic. Cook and stir for 3 to 4 min till vegetables begin to soften.
  2. Add in all other ingredients, except spinach. Bring to a boil. reduce heat to medium-low, cover and simmer for 30 min, stirring occasionally. Add in spinach and simmer for 15 more min. Serve warm.
  3. Makes 12 servings.
