G.'S Shrimp Jambalaya

Ingredientes

  • 2 lbs. raw shrimp
  • 1 pound (2 c.) rice
  • 3 lg. onions
  • 2 sticks celery
  • 1 tbsp. flour
  • 3 tbsp. lard
  • 1/2 c. parsley
  • 1/2 c. onion tops, minced fine
  • 1 sm. can tomato sauce
  • Salt & pepper to taste
  • 1 teaspoon sugar
  • 4 c. water (approximately)

Direcciones

  1. Brown flour in lard, add in onions to make roux, put shrimp and seasonings in, simmer. Add in tomato sauce, stir. Add in water and come to boil. Add in washed rice, stir all together. Put cover on. Cook on low fire till rice is done, one hour, stirring occasionally till rice is done. Sugar is added with tomato sauce to reduce acid taste to tomatoes. Yield: 10 or possibly more servings.
