4 ounces boneless skinless chicken breasts, cut into thin bite-size pieces 4 garlic cloves, smashed ½ teaspoon Splenda Brown Sugar Blend ¾ teaspoon fresh cracked :black pepper 1½ teaspoons fish sauce 1 Tablespoons avocado oil 1 teaspoon chopped Jalapeno peppers 1 teaspoon coriander leaves cilantro chopped
Smash the garlic lightly with the side of a knife. Heat the oil in a pan until very hot. Add the garlic and keep stirring so it doesn’t burn. When (very) lightly browned, add the chicken Cook until browned. Add the sugar, fish sauce, jalapeno and pepper. Mix well and serve with Brown Rice 3.5.3208
I was pondering the other day about that journey I took for 6 weeks to lose 20 pounds. After the challenge ended, I sensed a huge release of pressure off my shoulders. I never felt more liberated in my life. I have dieted before. As a matter of fact, those same 20 pounds have been gained and lost three times now. This last diet was the most intense physically, emotionally and mentally.
I am a lover of food; a creator in the kitchen. The limits set upon me made me feel bound and gagged. I felt as though I was being punished for loving to eat. They were forcing me to “change” my thoughts on food.
I am also a believer of finishing what you start. I owed it to myself after all. I found out something about myself as well. I am not a follower and I don’t believe everything I read.
Even though I knew some of the process was an unhealthy approach, the struggle would be real, and in the end that suffering would only lead the scale to go back up 4 to 5 pounds But I did it anyway.
I am now liberated and free to create in my kitchen again. My love for Asian cuisine shines on the plate, is savored on the palate and enjoyed by everyone.
