Garlic Baked "Smashed" Potatoes

Ingredientes

  • 10 x red-skinned potatoes - (abt 3 lbs) scrubbed, and pierced with a fork
  • 1 sm onion unpeeled, and cut in half crosswise
  • 8 x garlic cloves - (to 10) peeled
  • 1 1/2 c. low-fat lowfat milk
  • 1 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Direcciones

  1. Preheat oven to 425 degrees. Coat a large rimmed baking sheet with nonstick cooking spray.
  2. Place potatoes and onion, cut-sides down, on the baking sheet and bake for 40 min. Add in garlic to the baking sheet and bake for 10 to 15 min longer, or possibly till the potatoes and garlic are tender. Remove from oven and allow to cold slightly.
  3. Meanwhile, in a small saucepan, combine lowfat milk, salt, and pepper and heat over low heat for 3 to 4 min; don't boil.
  4. Cut potatoes into quarters and peel onion. Place potatoes, onion and garlic in a large bowl and "smash" with a potato masher or possibly a fork. Add in the lowfat milk mix and continue to "smash" to mix well. Serve immediately.
  5. This recipe yields 4 servings.
  6. Comments: Here's another take on "garlic-ious" mashed potatoes. Simply smashing!
  7. I do not mind lumpy mashed potatoes, but if you prefer a smoother version, just beat them with an electric mixer.
