Garlic, Oyster Mushroom And Oyster Flan

Ingredientes

  • 2 x egg
  • 6 1/2 ounce two percent lowfat milk
  • 6 1/2 ounce 35% cream
  • 8 ounce shucked oyster
  • 2 lrg garlic, cloves, to make 1 heaped tsp garlic paste
  • 4 Tbsp. minced chives
  • 3 1/3 ounce minced oyster mushroom
  • 1 Tbsp. unsalted butter Kosher salt black pepper

Direcciones

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Butter 6 ramekins (2 inches across) and set aside.
  3. Finely chop the mushrooms and saute/fry with the butter in a medium skillet over a medium high heat for 3 min, then set aside to cold down.
  4. Add in the peeled garlic to a small pot of water. Place the pot over a high heat and bring to a boil. Drain immediately and repeat the process 2 more times.
  5. Let the garlic cold and mash with the blade of a large knife to make a paste.
  6. Buzz the oysters in a food processor until finely minced and add in the garlic paste, cream, lowfat milk and Large eggs. Mix till a homogenous texture is achieved. Add in salt and pepper and mix well.
  7. Spoon the mushrooms into the ramekins, then pour in the oyster flan mix. Cover with minced chives, and cook in a bain marie in the oven for 15 to 20 min.
